An old shouyu-ya (soy sauce store) in Sakai and a kimchi manufacturer of Ikuno-ku, Osaka, jointly developed "Miso Kimchi", a new product created by mixing kimchi and white miso. The traditional food of Japan and korea combined became a wonderful product better than we anticipated.
Our new product "White Miso Kimchi" was jointly developed by manufacturers of "Amekaze Shouyu" and "Daiyu Shokuhin". "Amekaze Shouyu" is a long-established store since 1689. We have been producing soy sauce and other products such as miso and koji. While the consumption quantity of miso among families were not very popular, the president of Amekaze, Minoru Toyota had wondered how to increase the popularity of miso. One day when he was eating kimchi nabe at home, he noticed that just by adding miso the flavor of the dashi became richer. This experience ultimately led him to invent Miso Kimchi.

By using domestically produced soy beans and rice, a natural umami of koji is created. An abundance of this handcrafted koji is applied to white miso which is then mixed with kimchi.
Our kimchi uses domestically produced chinese cabbage and a precise amount of chili. At first it was difficult adjusting the amount of chili in order to require a balanced flavor so that the spiciness wouldn't erase the umami of the miso. We have two types of kimchi: mild kimchi and hot kimchi. Since kimchi consumption is increasing in popularity, Minoru Toyota hopes to make the use of miso popular with the help of kimchi.

Hot kimchi and mild kimchi are sold in 250g for ¥400. (5/15/10 Sankei Kansai)
